Caramel Chews

Ingredients:
- 250g of Longley Farm’s Double Cream
- 75g of Longley Farm’s Jersey Butter
- 1 tsp of Vanilla Extract
- 200g Golden Syrup
- 350g Caster Sugar
Instructions:
- Line your tin with grease-proof paper and lightly oil
- Heat the double cream, vanilla extract and butter in a saucepan until bubbles form around the edges. Take off the heat and set aside keeping the cream mixture warm
- Combine the golden syrup and sugar into a deep heavy saucepan and cook until it reaches 155°C
- Remove the pan off the heat and carefully add in the warm cream mixture, stirring constantly until the bubbles have subsided
- Heat the mixture back up to 128°C
- Pour into a pre-lined tin and leave to set for 3 hours
- Turn the caramel out onto the surface and cut it into bite-sized pieces using a well-oiled knife
- Individually wrap in grease-proof paper
