Anna's Winning Kopytka Recipe
There are a number of ways of making these, with the addition of potato, potato flour or potato starch - these are called “Kopytka” meaning horses hooves and cut in shape to look like a hoof. Made without the addition of potatoes, potato flour/starch these are called ‘leniwe pierogi’ or “lazy pierogi’ and are less starchy than the Kopytka.
INGREDIENTS:
- 250g of Longley Farm Cottage cheese
- 1 medium egg
- 150g plain flour (extra for dusting)
- 2 dessert spoons Potato flour (if not using Potato flour - 200g plain flour)
- 2 dessert spoons soft or melted Longley Farm Jersey butter

Pinch of salt
INSTRUCTIONS:

Place cottage cheese in a bowl and mash up with a fork or potato masher

Add eggs and melted butter and work into the cheese

Add flour and salt and bring together to form a soft workable dough, if too soft and sticky add a little more flour
- Dust your work surface with flour

Form the dough into a long sausage shape and cut into bite size diagonal shapes to look like hooves, or form into round balls using a wooden spoon to indent the middle (a perfect pocket to hold your chosen sauce/topping).

Put a pan of water onto boil and when boiling, drop the Kopytka into the water. These will soon be cooked once the ‘Kopytka” come to the surface and given an extra minute they will be ready.
These can be served a number of ways either savoury or sweet. Children love them with fruit, yogurt or ice cream. Perfect with stews, sauces or just plain thrown into a pan of melted butter with strips of crispy bacon.
