Buttermilk Pancakes
Fluffy American style pancakes delicious topped with bacon and syrup or banana and honey.
INGREDIENTS:

350g (12 oz) self-raising flour

2 tsp bicarbonate of soda

1 tsp salt

2 tbsp caster sugar

200ml (7 fl oz) Longley Farm Buttermilk
-
400ml (14 fl oz) semi-skimmed milk

2 eggs
-
100g (3½ oz) Longley Farm Jersey Butter, melted, plus extra for frying
METHOD:
Mix the flour, bicarbonate of soda, salt and sugar together in a bowl.
In a separate bowl or jug, mix together the buttermilk, milk, eggs and butter.
Pour the wet mixture into the dry and mix together. Do not overbeat - if the batter is lumpy just leave it to one side for a few minutes and the lumps will disappear.
Melt some butter in a frying pan.
Drop spoonful's of the mix into the pan and cook until golden on each side.
Serve with your favourite topping and enjoy!
