Thank you to Katie from Windermere for getting in touch with this delicious recipe which makes the nicest soda bread ever.
2 cups wholemeal self raising flour
1 tsp bicarbonate of soda
1 tbsp olive oil
Sieve all the dry ingredients into a bowl.
Make a well and pour in oil and buttermilk.
Stir until dough ball forms.
Pop onto a greased baking tray.
Shape into a round cob.
Cut a cross on top.
Brush with milk.
Bake for about 30 minutes, at 200°C (Gas mark 6) or until the bread is golden brown and sounds hollow when tapped on the base.
Serve with Longley Farm Jersey Butter and homemade jam.
Best consumed on day it's baked or cut into portions and freeze when cooled.
