Anna's Winning Kopytka Recipe
There are a number of ways of making these, with the addition of potato, potato flour or potato starch - these are called “Kopytka” meaning horses hooves and cut in shape to look like a hoof. Made without the addition of potatoes, potato flour/starch these are called ‘leniwe pierogi’ or “lazy pierogi’ and are less starchy than the Kopytka. These can be served a number of ways either savoury or sweet. Children love them with fruit, yogurt or ice cream. Perfect with stews, sauces or just plain thrown into a pan of melted butter with strips of crispy bacon.
