Strawberry Cheesecake
This delicious cheesecake is made with our strawberry fromage frais. If you're feeling adventurous, why not substitute it for Damson, Boysenberry or Apricot instead?
INGREDIENTS:

375g Longley Farm Strawberry Yogurt

325g Longley Farm Soft Cheese

3 Large Eggs

175g Caster Sugar

1 tsp of vanilla extract
Base

200g Sweet Oat Biscuits

50g Longley Farm Jersey Butter

Punnet of Strawberries to top
METHOD:
Pre-heat the oven to 150°C.
Crush biscuits in food processor or in a plastic bag with a rolling pin, then mix them with melted butter. Press this mixture into a base of a 23cm springform cake tin and pop into the fridge to firm up while the filling is made.
Combine in a large bowl the Soft Cheese, Fromage Frais, eggs, sugar and vanilla. Beat everything together until silky smooth. Pour the mixture over the biscuit base and place on the centre shelf of the oven and cook for 40 mins.
At the end of the cooking time, turn off the oven, but leave the cheesecake in the cooling oven to set until it’s completely cold. Remove the cheesecake from the oven and transfer it to a plate, cover and chill till needed.
Chop up the strawberries and arrange on the top.
