Orange Cake
The easiest cake possible, which will give first-time success even to those who don't know one end of a wooden spoon from the other. Great for children to bake too!
INGREDIENTS:

200g (3½ oz) Longley Farm Jersey Butter, melted

125ml (4 floz) Longley Farm Buttermilk

2 small eggs

grated rind on 1 orange

250g (9 oz) self-raising flour

200g (7 oz) sugar
Topping / Filling

Orange juice

METHOD:
Preheat the oven to 180°C /350°F / gas mark 4.
Grease and line a 18cm/ 7inch loose-bottomed cake tin.
Whisk together the buttermilk, butter, eggs, orange rind and sugar in a large bowl.
Quickly but thoroughly beat in the flour.
Pour the mixture into the cake tin and bake in the center of the oven for about 35 minutes or until a skewer insterted into the centre comes out clean.
Leave to cool in the tin for 10 minutes, then transfer to a cake rack to cool completely.
Toppings
If you want to keep it simple just dust the top of the cake with some icing sugar.
Alternatively make some orange butter icing by beating together butter, icing sugar and a bit of orange juice, then cut the cake in half and spread this on for a tasty filling.
For the top, make some orange icing by adding a little orange juice to icing sugar and spooning it on. Then decorate the top with your favourite orange sweets.
