Buttermilk Slim Cakes
Served hot and fresh with our Jersey Butter, these will go like hot cakes!
INGREDIENTS:

227g (½ lb) plain flour

½ tsp salt

¼ tsp bicarbonate of soda

116g (4 oz) Longley Farm Jersey Butter (softened)

58g (2 oz) caster sugar

58g (2 oz) sultanas

Longley Farm Buttermilk to mix
METHOD:
Sieve the flour, salt and bicarbonate of soda.
Rub in the butter to make fine crumbs, then add the sugar and sultanas.
Mix in the buttermilk to make a stiff dough.
Turn the dough onto a floured surface, roll out to ¼ inch (0.6cm) thick and cut into rounds.
Bake on a moderately heated griddle or a heavy based frying pan.
Turn when golden brown.
Serve very fresh with Longley Farm Jersey Butter.
