The Body Coach's Butter Chicken Curry

INGREDIENTS:

Knob of butter
-
2 x Cinnamon sticks

2 x Cardamom pods
-
2 cloves of Crushed garlic
-
1 inch of Chopped ginger
-
1 Red onion
-
2 tsp Garam masala
-
1 tsp Cayenne pepper
-
2 Chicken breasts (diced)
-
2 tsp Tomato puree
-
Splash of water
-
125ml Double cream
-
Salt and pepper
-
Fresh coriander
METHOD:
Melt the butter in a saucepan. Fry the cinnamon sticks, cardamom pods, garlic, ginger and onion until the onion is translucent.
Add the chicken. Once browned, add the tomato puree.
Splash in the water and bring to boil. Add in the double cream and season, bring back to boil.
Garnish with fresh coriander.
Serve on its own, with rice or naan bread.
