Buttermilk Scones
A traditional treat, delicious served hot with our Jersey Butter or with jam and cream.
INGREDIENTS:

85g (3 oz) Longley Farm Jersey Butter

350g (12 oz) self raising flour

85g (3 oz) caster sugar

175ml (6 floz) Longley Farm Buttermilk

2 tbsp milk
METHOD:
Preheat oven to 200°C / gas mark 6.
Rub the butter into the flour to make fine crumbs, then stir in the sugar.
If you're feeling a bit fruity, add in some raisins, sultanas, cherries or dates.
Quickly and lightly mix in the buttermilk to give a soft dough.
Roll out the dough to 3/4 inch thick and cut into rounds.
Place on a greased baking sheet.
Brush the tops of the scones with the milk.
Bake for approx. 12-15 minutes or until they are golden brown.
